In 2012, Jason Tait and his family, frequent guests for over a decade, bought Sailors, whose great food and friendly staff, made it their second home. They aim to preserve the legacy and help Sailors evolve. The great food remains but there will be increased emphasis on sourcing ethically produced ingredients and sustainable practices as well as enlivening the wonderful setting steeped with colourful history and characters.
Our Thai chefs continue to strive for the authentic alchemy of flavours, slow cooking and fresh, premium produce that sets great Thai apart.
After almost two decades, Sailors keeps evolving but the cornerstones remain. We use hard to source produce found in original recipes such as fresh kaffir lime and durian.
Preparation is slow cooking style, often over days, with techniques that are labour intensive but results in the freshest of dishes characterised by complex flavour balances that is just, well, delicious. Even our curry pastes are made on site daily, never from a jar.
Sailors has always used premium Australian produce to further elevate Thai classics and our revitalised kitchen now increasingly sources from humane and ethical producers.
Our dining room is elegant and modern, yet bears signs of its long history. Encounter a larger range of the carefully crafted Thai classics and inventive takes at individual tables for one, two and more. Enjoy our award wining wine selection and a relaxed and intimate atmosphere amidst the golden sandstone and flickering fireplaces – an oasis from the hustle and bustle of Sydney’s CBD.

Sailors Thai Canteen
A casual dining environment with a long communal table for guests without a reservation, open every day from noon until 3pm and from 5pm until 10pm. We do not take reservations for our canteen.
Sailors Thai Dining Room
A slightly more formal dining environment open for dinner Tuesday to Saturday from 6pm until 10pm and for lunch on Friday only until 2.30pm. We only take reservations for our dining room.
Reservations for 5 or more guests must be accompanied by credit card details. If the reservation is cancelled within 48 hours of the reservation a cancellation fee may apply. For groups of 9 or more guests, please contact us.
We attempt to contact all guests before the reservation to reconfirm and we reserve the right to cancel any unconfirmed reservations. We regret that we are only able to hold tables for 15 minutes.
